Easy Crock Pot Fajitas

I actually used this recipe for a carry in at work! It was easy to transport and a huge hit!

About this Recipe

As a poor college student I ate a variation of this all the time. I could buy a big bag of onions, a few peppers and have lunch for a week! This is good in a lettuce wrap or shell but also goes well on top of taco salad or a bowl. It’s like the veggies at your local chipotle mmmm


  • 1 of each Red, Yellow, green and Orange Pepper
  • 1 Pablano Pepper
  • 1 Onion
  • 1  Tomato
  • 1 TBS  Paprika
  • 1TBS Cumin
  • 1 tsp Chili Powder
  • 1/2 tsp  Oregano

I think Pablano’s are my favorite pepper. They add some nice flavor without a ton of spice. All the spice comes from the Chili powder so you can adjust that to your taste. 

Step by Step Instructions

Step 1

Slice all the Vegetables into Strips


Step 2

Add the Veggies and seasonings to the crockpot. Or if meal prepping store in a container for use later in the week.

Step 3

Cook Veggies on low for 4 hours or high for 2.
