Creamy Egg Salad

Sure egg salad can just be eggs, mustard and mayo- but add a few more ingredients and this simple classic salad becomes a filling meal.

About this Recipe

This is a simple lunch. You can serve it on a bed of greens, use celery to scoop it into your mouth, crackers or even a sandwich. There are 2 things that makes this egg salad different from other. First, You want to separate the yolks and the whites after the egg is hard boiled, don’t just toss the whole egg in the bowl and chop it up! When you do this the yolks mixture is smooth and consistent. Second, my secret ingredients!! Want to know what they are? Cream cheese and Butter! Yes I add a slab of Kerry gold to my egg salad because well Have you tried Kerry Gold? It is like a condiment it’s self! 

Ingredients

  • 6 Hard Boiled Eggs
  • 2 TBS Mayonnaise
  • 2 TBS Soften Cream Cheese
  • 2 TBS Mustard
  • 1 TBS Kerry Gold (Butter)
  • 1 Tbs Dill
  • Salt and Pepper to taste

Let the Butter and cream cheese come to room temp first. This will help achieve the fluffy consistency. Bacon is not required-But it is scrumptious sprinkled on top!

Step by Step Instructions

Step 1

Hard Boil your Eggs. To do this put them in a pot full of water. Set the pot on the stove and turn the stove top onto medium high. When the water starts to boil set a timer for 15 min. After that, Immediately submerge the eggs into cold water.

 

Step 2

Separate the yolks into one bowl and the whites into another. 

Step 3

Add all the above ingredients to the yolks and whisk with a fork until smooth. 

Step 4

Add the Egg whites to this mixture and mix with a fork. Chopping up the whites to your desired size.
